You couldn't
come to America and not have pancakes and maple syrup for breakfast at
some time.
Ingredients

1 cup (150
grams) self raising flour

Quarter
teaspoon of salt

1 eggs
beaten
-
1 and half
cups of milk (375 mL)

2
tablespoons of butter (40 grams)
METHOD

Sift flour
and salt and make a well in the centre

Place egg in
well and using a wooden spoon, gradually work in the flour and half the
milk. Blender may be used.

Beat well
for 1 minute an stir in remainder of the milk

Allow to
stand for 30 minutes before cooking. This softens the cellulose of
the starch grains producing a lighter batter.

Prepare the
pan for cooking: heat and add quarter teaspoon of butter. Wipe
out pan then with paper

Melt an
eighth of a teaspoon of butter in the pan. Pour in sufficient batter
to just cover the base of the pan. Cook until set and lightly
browned.

Turn pancake
with a spatula or by tossing.
