Pancakes

 

You couldn't come to America and not have pancakes and maple syrup for breakfast at some time.

Ingredients

  • 1 cup (150 grams) self raising flour

  • Quarter teaspoon of salt

  • 1 eggs beaten

  • 1 and half cups of milk (375 mL)

  • 2 tablespoons of butter (40 grams)

METHOD

  1. Sift flour and salt and make a well in the centre

  2. Place egg in well and using a wooden spoon, gradually work in the flour and half the milk.  Blender may be used.

  3. Beat well for 1 minute an stir in remainder of the milk

  4. Allow to stand for 30 minutes before cooking.  This softens the cellulose of the starch grains producing a lighter batter.

  5. Prepare the pan for cooking:  heat and add quarter teaspoon of butter.  Wipe out pan then with paper

  6. Melt an eighth of a teaspoon of butter in the pan.  Pour in sufficient batter to just cover the base of the pan.  Cook until set and lightly browned.

  7. Turn pancake with a spatula or by tossing.
