Maureen's yummy almond cake

 

Just the thing with your cup of tea.  Kate's older sister, Maureen made this and we couldn't wait to have it each afternoon until we looked forlornly at the empty cake tin.

  • 1 cup of butter or marg.

  • 1 cup of sugar

  • 3 eggs

  • 2 and a quarter cups of flour

  • 2 tsp of baking powder

  • Half teaspoon of salt

  • Quarter of a cup of milk

  • 1 can of solo almond filling

Method

  1. Cream  butter, sugar.  Add eggs - mix thoroughly. 

  2. Add almond filling and mix well

  3. Sift flour, baking powder and milk

  4. Add to creamed mixture along with milk

  5. Pour into greased and floured pan

  6. Bake for 50 minutes at 350 degrees F or until done.

  7. Cool in pan and then remove.
