Kristine's pumpkin fruit cake

 

I don't know how many times I've made this over the last 25 years but its always a winner!  It keeps well and doesn't dry out like lots of cakes due to the pumpkin

  • 1 cup of butter or marg

  • 1 cup of sugar

  • 1 cup of cooked pumpkin

  • 1 pkt of mixed fruit

  • 2 eggs

  • 1 teaspoon of vanilla essence

  • 1 cup of plain flour

  • 1 cup of SR flour

METHOD

  1. Cream butter and sugar together

  2. Add vanilla essence and cream a bit more

  3. Add eggs and mix

  4. Add fruit and pumpkin together

  5. Add sifted flour and stir

  6. Add extra cherries if you want to

  7. Grease your cake tin as usual

  8. Bake 180 degrees for 45 minutes

  9. The aroma will be so good you'll want the first slice then and there with a cuppa
