Hash brown casserole

 

This is one of those many 'naughty' recipe's which everyone really likes.  It is an old well tried recipe and belongs to Ila Riordan and she was considered to be the best cook in Harrison County Iowa. You can make it in a large throw away alfoil tray.  (one pan - no dishes: what could be better!)

  • Grease the tray lightly with butter and then add I kg of hash brown cubes (cubed not shreaded).  In Australia something similar could be found in the frozen section of the supermarket - potatoe cubes)

  • Add half a cup of melted butter over the top

  • Add salt and pepper

  • Add half a cup of chopped onions

  • Add two cups of good quality ham chopped into small cubes

  • Add 2 small tins of either (cream of celery, cream of mushroom or cream of chicken)

  • Add one cup of milk

  • Add one cup of sour cream

  • Add 2 cups of grated velveta cheese over the top

  • Cook for at least 45 minutes at 350 degrees F
