Debbie's ultimate Broome curry

I'd like a dollar for every time I've made this curry.  I was shown how to make it by Debbie who belongs to one of the well known Broome families

  • 1large onion

  • 3 small pieces of garlic

  • 1 small piece of fresh ginger

  • 1 tablespoon of curry (your favourite brand)

  • crush together, brown with a little oil but don't burn

  • cut up chicken (leave the bones in) or beef into small pieces and add to the curry mixture

  • add a spoon of water if too dry

  • you can also add carrot and celery

  • sprinkle corriander, cumin, tumeric, 5 spice, ground chilli and cinnamon

  • simmer 15 minutes with the lid on

  • take lid off

  • add small tin of coconut milk

  • add small tin of pineapple pieces

  • add small tin of chimpinons

  • cook till paste thickens

  • serve on rice of course, yogurt on the side and cucumber
