Black bean Mexican Salsa

 

Mike made this one and the fresh cilantro gave it a unique flavour.  Great dish to take to a BBQ:

  • 1 16 oz can black beans

  • 1 16 oz can corn

  • 1/4 cup fresh cilantro

  • 1/4 cup green spring onions

  • 1/4 cup of red onions

  • spoon of cumin

  • 1/3 cup of lime juice

  • 3 Tablespoons olive oil

  • Leave for 24 hours

  • When you serve add chopped tomatoes serve with spicy potatoe chips on the side.
