Best blueberry muffins

 

I got this recipe from Lyn in Broome.  She made this recipe for many years and swears by it.

  • 2 cups of flour

  • 4 teaspoons of baking powder

  • 1 teaspoon of cinnamon

  • Half a teaspoon of salt

  • Half a cup of castor sugar

Wet together the following:

  • 100 grams of marg or butter

  • 1 cup of milk

  • 1 large egg

  • 1 to one and half cups of frozen or fresh blueberries

METHOD

  1. Sift the dry ingredients into a fairly large bowl

  2. In another container, warm marg until melted, then add the mild and eggs and beat to mix thoroughly

  3. Prepare fresh or partly frozen berries

  4. Add wet mixture and pour into the dry mixture

  5. Fold everything together without overmixing.

  6. Divide mixture evenly into 12 muffin pans.

  7. You can top them with cinnamon, sugar.

  8. In a screw topped jar, shake together - quarter cup brown sugar, quarter cup of white sugar, 1 teaspoon of cinnamon) Use half to 1 tsp on each muffin

  9. Bake at 220 degrees C for 12 to 15 minutes
